Here are the test results from the various millets malted. Also, our malter indicated:
“As this was an experiment there is a wide range of differences in the analyses. The one constant that we noticed about all the millet was that it does not have near the enzyme quantity of Sorghum. Sorghum is comparable to Barley in enzymes. However, the whole grain millet is much lower. Brewers will have to add commercial enzymes to get the conversions they require. However, it still offers them a viable alternative and also a nice adjunct to include even in their barley and wheat based beers for flavor, profile, mouth feel, etc.” Jason K.
