On March 1, 2007, Section 3-301 of The Colorado Retail Food Establishment Rules and Regulations became effective. This section addresses the prevention of food contamination from food employees by specifying employees shall have no contact with ready-to-eat foods with their bare hands. If a retail food establishment prepares ready-to-eat food items that require bare hand contact by food employees, Section 3-301 (D) must be followed to be in compliance with the requirements of this regulation.
